I have told you before that last Christmas we were in Vietnam. We promised that we wouldn’t buy any gifts because we had already trouble with our overweight luggages. So therefore I bought a spa-day for both of us and an dinner in Italian restaurant (I don’t like traditional Finnish Christmas meal so I was more than happy when I had my fork in the pasta instead of carrot casserole). Ok let’s get into the point, as a Christmas present he gave me that Tiffany bracelet (in the pictures) and now when we are going to Paris I thought that he could continue this Christmas tradition with little nice charm, either Cupcake or Blue Box. So dear honey I really hope you would read this so you could stop stressing and star enjoying instead.
Yesterday I made my version of Rocky Road. I don’t like canned cherries so I used dried cranberries instead. And basically you can add anything you like, gingerbread crush, brandy, raisins, nuts… Rocky Road is not well known in Finland. Don’t know why but I don’t remember that I would have bought it even once. But abroad I have met Rocky Road brownies, blondies, cupcakes and fundges.
100g kuivattuja karpaloita
Vuoraa vuoka kelmulla. Pilko pähkinät, siemenet ja vaahtokarkit. Sekoita ne keskenään. Sulata suklaat. Lado vuorotelleen suklaata ja vaahtokarkkisekoitusta päällekkäin, kumminkin niin että alimmainen ja päälimmäinen kerros olisi suklaata. Anna kovettua jääkaapissa.
250g white chocolate
250g milk chocolate
100g dried cranberries
70g cashew nuts
30g pine nuts
Line container with freezer bag. Chop marshmallows, nuts, seeds and berries and mix them together. Melt chocolates. Make layers from chocolate and from the nut-seed-marshmallow combination. Put the Rocky Road into the fridge and let it set completely.
